ANGELES CITY, PAMPANGA– A visit to this local bistro gives caffeine enthusiasts more than the usual cup’s worth of coffee.
The Coffee Academy, or more commonly referred to by the Pampangueños as coFIAcad, was founded by Flordelita Arrozal four years ago in an effort to introduce the exotic taste of locally grown coffee beans.
This includes the Liberica, or popularly known as kapeng barako, which only grows in very few countries like America, Vietnam, and the Philippines.
The coFIAcad also harvests Arabica, or the aromatic Kapeng Tagalog; Robusta; and the Excelsa from the mountains of Sagada and Benguet down to Cavite and Batangas.
It offers guests their specialty of caffeine-infused drinks that are house blended by coFIAcad’s coffee makers trained by the owner herself.
What draws most costumers here–apart from its clean and cozy ambiance–is the “academic” part of the whole drinking experience.
“All of our staff are trained on how a particular drink is prepared, from the roasting of the coffee beans to the blending itself. This is so we can respond to any guest who would want to know how his or her drink was prepared and where the beans came from,” explains Jasper Sangalang, supervisor at the Marlim Mansion branch.
From its first shop in Sta. Rosario, the Coffee Academy now has seven branches across Pampanga and has been turned to a coffee bar-cum- restaurant.
Aside from brewed coffees and lattes, best-sellers include the Black Forest, inspired from the flavored cake added with a coffee twist; and the Cookies and Cream milk shake.
Their main dishes, meanwhile, are quite affordable and mostly good for sharing. Some of their must-tries include Pampanga’s famous sisig and spicy pansit kanton.
Local foodies like “gluttonguide” from Openrice.com also recommend coFIAcad’s California Cheeseburger and the Ham and Cheese Sandwich. The blog “Real Men Wear Aprons” suggests the White Choco Frappe and Potato Croquette nibblers.
Coffee lover or not, there is a delight in knowing that enjoying a cup of coffee at the Coffee Academy contributes to the country’s coffee industry.
