PARAÑAQUE CITY, METRO MANILA – Marie Gonzalez became a full-fledged vegan in 2008, the same year she opened Kitchen Revolution.

Marie has practically taught herself how to cook and when she turned vegan, she had to study further the benefits of plant-based cooking.

Today, Marie’s cakes and pastries are created using only plant extracts as ingredients instead of animal by-products such as butter, eggs, and dairy.

Marie also uses natural ingredients like canola oil and soy milk which do not only match the preference of vegans but actually contains less fat and cholesterol.

“Revolution,” she calls it because Marie has become very passionate about her advocacy. She often writes in her blog her advocacy on personal health, climate change and animal liberation.

She wants to convince and educate people that the effects of exploiting animals will bounce back to the consumers. With this in mind, she refuses to use animal by products, even the sugar she uses is washed, if not, she uses brown sugar instead.

Not surprising, Marie’s restaurant soon became a hit attracting its fair share of customers including anti-animal cruelty groups in Metro Manila.

Marie is hands-on when it comes to baking and food processing to the packaging and preparation. Total quality control is a must for Marie to ensure that everything goes just as she wants it.

Not a lot of people know about Kitchen Revolution but for some diligent food hunters like Betty of Southbound, Kitchen Revolution is the way to go if you want more “healthy and compassionate eating pleasures right in the South.” She particularly enjoys the Almond Rosewater Cupcakes with Rosewater Buttercream.

Other cupcake flavors include Red Velvet, Chai Latte, Coconut, Almond Rosewater, Vanilla-Black Chocolate Swirl and Lemony Cupcakes. Marie also has non-cupcake selections like the Mango-Cashew Coffee Cake, Cinnamon Walnut Coffee Cake, and Banana Split Brownies.

If you want to share in the advocacy and go beyond the buying and eating art, Kitchen Revolution offers short cooking courses, too.
