Sample fried chili frogs at Binondo’s famous ‘estero’

MANILA CITY, METRO MANILA – If  the estero in Chinatown may not sound classy for your hungry tummy, think again because this famous food haunt is where you find exotic dishes like fried chili frogs.

Our team at loQal.ph actually went there eager to sample whatever exotic food we can get. Challenging as it may seem for those who are not used to it, and as cliché as it sounds, the chili frog is just as easy to chew and tasty like as fried chicken.

A small serving, which is already good for four people, costs P110 while the big serving costs P200.

Out of curiosity, I asked Gerald Sejas, who’s been working as cook for Estero LGA Fastfood for more than a year now, how it’s done and where they get their supply of frogs. He told me the recipe is just simple.

“We get our skinned frogs from Nueva Ecija, which range about three to four kilos a day. Once delivered, we just have to clean them again and they are ready for deep frying,” he says.

Add some salt, pepper, garlic, a dash of MSG and cornstarch and yes, no need to marinate because frog meat is tasty.

“You just have to put all these (spices) and then it’s ready for frying,” Gerald, who hails from Antique, says proudly.

Kahit kami sa Antique noong araw, yan din ang kinakain namin. Bukod kasi sa malasa, mas masarap din kainin kasi pinaghihirapan hulihin (We used to eat frogs in Antique because it is tasty and rewarding in a way because it’s not easy to catch one),” he adds .

Because it does taste like chicken, we ordered another serving of chili frog. For the adventurous eaters, you can also try the adobong palaka or the buttered frog.
