CAPAS, TARLAC – This 24/7 bakery is touted to have the best pandesal in town although its popularity is largely word-of-mouth.
Everytime I visit my hometown, I always bring back with me to the city a bag of Mulawin pandesal, which ends up as breakfast for the next two to three days. Apparently, it’s already ubiquitous; almost every town in Tarlac has AT LEAST one.
If, like me, you find it amusing counting how many Collette’s Buko Pie stalls you find when you drive to Laguna or Batangas, then Mulawin isn’t exactly as many, but you get the idea. In Capas, for example, two Mulawin billboards are exactly 2 minutes apart.
So what makes their pandesal stand out when everywhere there’s a neighborhood bakery? Like I said, even after three days of existence, the pandesal is still soft, not crusty. It’s got a semi-sweet, milky taste to it, not bland or “lasang hangin“.
Or, reheat it a bit on the toaster, then eat plain or apply some jam or butter. Personally, I dip mine in coffee or hot Milo but hey, when it comes to pandesal, to each his own.
Residents in Metro Manila may not be as familiar since I haven’t seen a Mulawin billboard until now. But it’s gotten a lot of chatter in online forums already and some die-hard fan even created a Facebook page.
But don’t just take my word for it. There are the those who don’t mind walking far just to get a pandesal fix while others, like balikbayan Rizi Valerie, for example, cannot help but feel nostalgic about Mulawin.
So what’s exactly the story behind Mulawin? I haven’t found published accounts yet although it’s said that it is a family-owned business operated by the Ortiguerras from Bulacan province – a fact I myself confirmed during my last purchase.
At P2 per piece, it has to be the best pandesal out there - when it comes to value for money, strictly speaking. I still hold Pan de Manila’s “pugon”-baked pandesal in high regard, although theirs sells at P5 per piece.
So if Mulawin pandesal is that good but is largely confined to the provinces, then it makes good business sense to open one anywhere in Manila, right? No, all those little bakeries you see are family-owned. Mulawin is not available for franchising yet.
In the meantime, I shall content myself with buying a bag of pandesal everytime I see that signboard. Most likely, even at 3 o’clock in the morning.

In Concepcion Tarlac branch of Mulawin Pandesal there is a sign inside their bakery that says “Wear Hairnet, Wear Apron, Wear Health Card” but not one of these requirements are being followed by their workers. Hairnet, most especially, is the most important among the three but no one is wearing that inside their bakery. It’s so disgusting.
